Lemon Lentil Soup
Here is one of my go-to soups.
This may look like a lot, but the basic actions of creating a soup, still follow. Like all of my recipes, if you like to create your own rules and follow the basic guidelines, you’re in the right place.
I first like to cook the lentils in boiling water until desired texture. While it is cooking, I prepare my ingredients.
Chop onion, carrots, zucchini and mince garlic. Set aside.
Heat pot with oil and add onion and garlic. Add carrots and zucchini, cook until it is slightly soft. Add cooked lentils.
Let it simmer for 5 minutes and add the broth. When it boils, add a couple tablespoons of lemon juice, or however sour you want it. Add salt and pepper to your liking. Then let it simmer for another 5 mins.
